Ingredients
Dressing:
- 1/4 cup butter softened
- 1/2 cup mayonnaise
- 1/4 cup Parmesan cheese finely grated
- 2 tbsp chives chopped
- 1/2 tsp Worcestershire sauce
Potatoes:
- 5 russet potatoes
- olive oil
- salt
- pepper
Toppings
- 1 cup shredded cheddar cheese
- 1/2 cup bacon cooked and chopped
- 2 tbsp chives chopped
Instructions
Dressing:

Combine the dressing ingredients in a small bowl, cover, and chill to let the flavors meld. The dressing can be made a few days ahead, though a couple of hours in the fridge will improve the flavor.
Potatoes:

Preheat the oven to 425°F (220°C).

Wash the potatoes and rub each one with olive oil. Sprinkle generously with salt and pepper, then prick the skins several times with a fork. Place the potatoes directly on the oven rack or on a foil-lined baking sheet and bake for 50 to 60 minutes, turning once or twice. They are done when the skins are crisp and a knife slides in easily.
