Recently I tried a new recipe: Salsa Chicken. It was simple, flavorful, and the family approved, so it’s now a regular in my weeknight rotation.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 c salsa
- 1.25 oz taco seasoning mix
- 10 oz cream of mushroom soup
- ½ c sour cream
- Shredded cheddar cheese to sprinkle on top
- Optional crushed tortilla chips
Instructions

Add chicken to the slow cooker.

Sprinkle taco seasoning evenly over the chicken.

Pour salsa and cream of mushroom soup over the chicken.

Cook on low for 6 to 8 hours, until the chicken is tender and cooked through.

Remove from heat and stir in the sour cream until smooth.

Serve over rice or your favorite grain.

Sprinkle shredded cheddar cheese on top and add crushed tortilla chips for extra crunch if desired.
Notes
Crushed tortilla chips add a pleasant crunch, but you can skip them or substitute with crushed crackers. Leftovers reheat well.

The original version of this recipe didn’t include cheese or chips, but adding shredded cheddar and a few crushed tortilla chips gives it extra texture and flavor that our family enjoys.
