I’m craving chili! This No Bean Chili will hit the spot.
Cold weather, snow and single-digit temperatures have made me long for a big pot of hot, thick chili. This No Bean Chili is a smaller, easy-to-make batch you can prepare any day when you want something comforting and flavorful without the fuss.
Do you love thick, spicy, hearty chili? Me too. It’s one of my favorite winter meals, and I have several chili recipes I return to again and again.

All of those include beans, which I enjoy, but my husband doesn’t. That leaves me with three choices:
1. Eat all the chili myself — not ideal.
2. Cross chili off the menu — unacceptable.
3. Make chili without beans — completely doable.

Variations:
Customize the heat and texture to suit your taste. Add hot peppers such as banana or jalapeño, use medium or hot salsa for more kick, toss in sliced mushrooms, or swap ground beef for small pieces of round steak for a different texture.
What is hominy?
Hominy is corn that has been treated with an alkaline solution to remove the hull and germ. The kernels become larger and puff slightly. You can find canned hominy in most grocery stores in the canned goods aisle.

Serve this chili with warm biscuits or cornbread and top with sour cream, shredded cheese, or your favorite garnishes.
No Bean Chili Recipe
Ingredients:
Convenience-friendly ingredients: diced tomatoes, salsa, ground meat, onion, whole kernel corn, and hominy.
Recipe Directions:
This recipe is quick: chop, brown, open a few cans, and warm through. It doesn’t get much simpler.

No Bean Chili Recipe
Hot and hearty, this chili satisfies cravings and is perfect for anyone who prefers chili without beans.

Ground Meat -

Whole Kernel Corn

Hominy

Instructions
Recipe Directions:

Dice the onion and brown it with the ground meat until fully cooked.

Drain and discard excess fat.

Add the remaining ingredients to a small crock pot and heat on low for 3 hours, until flavors meld.

Alternate method: If you’re short on time, combine everything in a large saucepan and simmer on the stovetop for about 20 minutes.
