Pumpkin Spice Cheerios Snack Mix + Cheerios Promotion

I typically save most pumpkin baking for September and beyond, and since September is my birthday month I always feel a little extra festive when pumpkin season begins. Recently I gifted a box of Cheerios™ to a fellow blogger and friend, and I’m excited to see what she makes with it—there are so many possibilities.

The Cheerios™ promotion is easy to use but limited in time, so if you want to take part, act soon. Look for the special box at your local Walmart labeled “Buy a Box, Gift a FREE Box.” The sticker on the box directs you to enter a code on the promotion site. All you need to send a free box is the recipient’s first and last name and their email address—the whole process takes only a minute.

This snack mix is dangerously good and will likely become my go-to for game days or to bring to events. Multi-Grain Cheerios™ are combined with pecans, Bugles corn chips and roasted salted pumpkin seeds, then coated in a pumpkin spice glaze. A bag of pumpkin spice latte–flavored chocolates gets stirred in at the end for an extra sweet hit. The result is a perfectly balanced mix of pumpkin spice, sweet, and salty that disappears quickly—so make a big batch if you expect guests.

Pumpkin Spice Cheerios™ Snack Mix

Ingredients

  • 6 c. Multi-Grain Cheerios™
  • 4 c. Bugles corn chips
  • 2 c. pecans
  • 1 c. roasted and salted pumpkin seeds
  • 1 bag 9.9 oz Pumpkin Spice Latte flavored chocolates
  • 6 T. unsalted butter melted
  • 3 T. dark brown sugar
  • 2 T. pure maple syrup
  • 1 T. pumpkin pie spice
  • 1 t. salt
  • 1/2 t. smoked paprika

Start Cooking

Instructions

  • Preheat the oven to 250°F (120°C).
  • In a very large bowl, combine the Multi-Grain Cheerios™, Bugles, pecans and pumpkin seeds.
  • Melt the butter and whisk in the brown sugar, maple syrup, pumpkin pie spice, salt and smoked paprika until smooth.
  • Pour the butter-spice mixture over the Cheerios™ mixture and stir gently to coat everything evenly.
  • Spread the coated mix evenly across two baking sheets lined with parchment paper.
  • Bake for 1 hour, stirring every 15 minutes so the mix toasts evenly.
  • Let the snack mix cool completely, then stir in the pumpkin spice latte chocolates. Store in an airtight container for up to one week.
