Super simple chicken fillet burgers with halloumi, pineapple and chilli jam.
Ingredients
- 2 large chicken breasts
- 2 tsp smoked paprika
- 4 brioche rolls
- Lamb’s leaf lettuce
- 100g halloumi
- 4 heaped tsp chilli jam
- 4 pineapple rings
Instructions
- Slice each chicken breast fillet in half horizontally and season both sides with smoked paprika.
- Cook the fillets on a griddle or under a hot grill until there is no pink remaining and the chicken is cooked through.
- Assemble the burgers: place a fillet in a brioche roll with lamb’s leaf lettuce, a slice of grilled halloumi, a pineapple ring and a spoonful of chilli jam.
