Gather round, friends — it’s story time.
Back when my husband and I were dating, he wanted our first Valentine’s Day to be special. Instead of going out in our little college town, he decided to cook before we headed to his fraternity’s date party.

We exchanged gifts and opened cards. My heart skipped when I saw the card he’d chosen—until he started laughing. We had both bought the exact same card. Of all the choices, we’d picked the same sentiment.
That little coincidence felt like fate to me. If we had the same words to express our feelings, maybe we were meant to be. By the next Valentine’s Day I was planning a wedding.
Now that we’re married with kids, February 14 looks different. Instead of hunting for gifts, I find myself at craft stores collecting supplies for classroom valentine boxes. But some things don’t change: homemade treats still make the day special.

These brownies are perfect for every occasion — Valentine’s Day or any ordinary day you want to make special. They’re fudgy, chocolaty, healthier than usual (thanks to whole wheat pastry flour and applesauce), and made in one bowl. No mess, no fuss.
I tested at least ten batches to get here. Some were promising, others not so much, but this version won over my family. My oldest didn’t believe they were healthy. Friends texted asking for more. They’re that good.

Ingredients
- 2/3 cup packed brown sugar
- 1/2 cup whole wheat pastry flour
- 1/3 cup cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/3 cup unsweetened applesauce
- 2 tablespoons canola oil
- 1 teaspoon vanilla
- 1–2 teaspoons granulated sugar for topping
Instructions
- Preheat oven to 350°F.
- In a large bowl, whisk together brown sugar, whole wheat pastry flour, cocoa powder, baking powder, and salt until evenly combined and any clumps of brown sugar are broken up.
- Add the eggs, applesauce, canola oil, and vanilla. Stir just until combined — avoid over-mixing.
- Pour the batter into an ungreased 8×8-inch pan and smooth the top.
- Bake about 28–33 minutes, until a toothpick comes out with a few moist crumbs. For cakier brownies, bake a bit longer until the toothpick is completely clean.
- Remove the pan to a cooling rack and immediately sprinkle the top with granulated sugar for a light crunch and sweet finish.
- Allow brownies to cool before cutting into 16 squares.
