I really love simple, playful recipes. Here I added SPAM to the New York Times Cooking brownie recipe for a salty-sweet twist.

For fun, I arranged the SPAM in a lattice pattern — purely decorative but it makes the finished brownies look interesting.

Ingredients
- 3 ounces unsweetened chocolate
- 8 tablespoons (1 stick) salted or unsalted butter, plus extra for greasing the pan
- 1 cup sugar
- 2 eggs
- 1/2 cup all-purpose flour
- Pinch of salt (if using unsalted butter)
- 1/2 teaspoon vanilla extract (optional)
- A few slices of SPAM
Directions
1. Preheat the oven to 350º F. In a small saucepan over very low heat, combine the chocolate and butter, stirring occasionally. When the chocolate is nearly melted, remove the pan from the heat and continue stirring until smooth. Grease an 8-inch square baking pan; you can also line it with parchment or wax paper and lightly grease the lining.

2. Pour the chocolate-butter mixture into a bowl and stir in the sugar. Beat in the eggs one at a time until combined. Add the flour, and if using, the salt and vanilla. Stir just until no streaks of flour remain—do not overmix.
3. Slice the SPAM into sticks or the shape you prefer. Pour the batter into the prepared pan and arrange the SPAM slices on top. Press them in lightly so they stay in place while baking.

4. Bake for 20 to 30 minutes, or until the brownies are set and just barely firm in the center. Allow the pan to cool on a rack before cutting into squares.
