Today I’m sharing a simple new recipe: Keto crispy fried sardines made from a can of sardines! You can use fresh sardines, but canned sardines are convenient, budget-friendly, and beginner-friendly.
This easy recipe is perfect for those following a ketogenic or low-carb diet and makes a great snack or light meal.

If you’re new to sardines, you might want to try a gentle introduction rather than jumping into more intense preparations. I ran a 72-hour sardine challenge in my Facebook group and discovered many people had never tried them before. If that sounds like you, this crispy fried version is a great place to start.

Note: This crispy fried sardine recipe is not meant for an intensive sardine challenge on keto, but it’s ideal for anyone nervous about trying sardines for the first time.

For the crunchy coating in this recipe I used IndigoNili’s carnivore breading mix, though you can substitute pork panko or a similar low-carb crumb alternative.
Equipment I used for this recipe:

- Enameled cast iron pan (or any heavy skillet)
Pro tip: Sardines offer more than convenience on keto — they’re nutrient-dense and can support heart and brain health, inflammation control, and mood due to their omega-3s and vitamins.

One serving of sardines provides well over the daily requirement for vitamin B12, which supports nerve function.

Crispy Keto Sardines Ingredients
- 1/3–1/2 cup carnivore-style breading (IndigoNili’s mix or a pork panko substitute)
- 1/2 tsp Old Bay seasoning (or to taste)
- 1 can brisling sardines, packed in olive oil
- 1 large egg (for egg wash)
- Bacon grease or tallow for frying
How to Make Your Crispy Fried Sardines
- Prepare the carnivore breading in a shallow bowl and season to taste (about 1/2 tsp Old Bay if desired).
- Drain the oil from the sardine tin and remove the sardines carefully to keep them intact.
- Beat the egg in a separate bowl to make an egg wash.
- Dip each sardine into the egg wash, then coat evenly with the breading. Place on a parchment-lined baking sheet while you finish coating the rest.
- Heat a skillet over medium-high heat and add a generous amount of bacon grease or tallow — enough for shallow frying, not full immersion.
- When the fat is hot and sizzling, carefully add the breaded sardines to the pan. Work in batches if needed and avoid crowding; the delicate fish can stick together.
- Brown on one side, then gently flip to brown the other side. The sardines are already cooked, so the goal is to achieve a crispy, golden exterior.
- Transfer cooked sardines to paper towels to drain briefly, then serve warm.
Notes on Keto Sardines
Smaller brisling sardines are excellent for frying and one of my favorite canned options. Serve with freshly squeezed lemon juice, a simple sardine dipping sauce, or a keto tartar sauce.
Sardine dipping sauce idea: whisk together 1/3 cup olive oil, 1/4 cup apple cider vinegar, 1 tbsp yellow mustard, and 1/4 tsp sea salt (or to taste). Shake or blend and drizzle 1–2 tbsp over the sardines.
You can use either canned or fresh sardines in this recipe; canned are just faster and very convenient.

These easy crispy fried sardines are a nutritious, approachable way to enjoy canned fish. A simple dipping sauce suggestion is included in the notes.
Ingredients
- 1/3–1/2 cup carnivore-style breading
- 1/2 tsp Old Bay seasoning
- 1 can brisling sardines, packed in olive oil
- Bacon grease or tallow for frying
Instructions
- Prepare the carnivore breading and set aside in a bowl.
- Season the breading to taste (about 1/2 tsp Old Bay).
- Drain the sardines and remove them carefully to avoid breaking.
- Beat an egg in a separate bowl for the egg wash.
- Dip each sardine in the egg wash, coat with crumbs, and place on a parchment-lined tray.
- Heat a skillet, add bacon grease or tallow, and heat until sizzling.
- Carefully add sardines to the pan without crowding; they are delicate.
- Brown on one side, then flip and brown the other. The sardines are already cooked, so you are crisping the exterior.
- Remove to paper towels to drain briefly, then serve and enjoy.
