This recipe is a grown-up take on the childhood classic “egg in the hole.” A layer of mashed avocado adds creaminess, while sharp cheddar melts around a runny egg in the center. The combination of crunchy, buttery bread, gooey cheese, silky avocado, and a soft yolk makes every bite satisfying.

Total time is about 20 minutes. It takes a little longer than a standard grilled cheese because you toast one side first, cut a hole, then add the egg and finish cooking covered so the egg sets. Toast the first side, use a cookie cutter to cut the hole (a heart shape is a fun option), then crack the egg into the hole and cover the pan for 6–8 minutes until the white is set.

Because the sandwich is thicker than a single slice of bread, cut a smaller hole than you would for a thin slice. A sturdy cookie cutter works best to cut through the sandwich cleanly. I used a heart-shaped cutter, but any small shape will do.

Tip: mash the avocado before spreading it. Sliced avocado can slip out of the sandwich; mashed avocado stays in place and provides a creamy layer that marries well with the melted cheddar. For extra indulgence, feel free to add cooked bacon — it pairs perfectly with the egg and cheese.

A simple grilled cheese is elevated with mashed avocado and a runny egg tucked into the center. Creamy avocado, melted cheddar, and a soft yolk create a rich, balanced sandwich that’s quick to prepare and perfect for brunch.

Ingredients

  • 4 slices Bread
  • 1 tablespoon Butter
  • ½ an Avocado
  • Salt and Pepper
  • 4 slices Cheddar Cheese
  • 2 Eggs

Instructions

  • Butter one side of each slice of bread. Spreading butter directly on the bread yields a crisp, evenly browned exterior.
  • Mash half an avocado in a bowl. Season with a pinch of salt and pepper. Adjust amount to taste if using a larger or smaller avocado.
  • Place two slices of bread buttered-side down. Spread mashed avocado on each, then top with two slices of cheddar per sandwich. Place the second slice of bread on top, buttered-side up.
  • Heat a skillet over medium and add the sandwiches. Toast the first side for about 3–4 minutes until golden. Remove sandwiches to a cutting board with the toasted side down and use a cookie cutter to cut a small hole in the center.
  • Return sandwiches and the cut-out circles to the pan. Lower the heat to low, crack an egg into each hole, cover the skillet, and briefly increase the heat for about 10 seconds to kick-start cooking. Then reduce back to low.
  • Cook covered on low for 6–8 minutes, or until the egg whites are set and the bread is toasted to your liking. If needed, raise the heat slightly to medium-low to finish cooking.
  • Serve immediately while the cheese is melty and the yolk is still soft.

Notes

Plan on roughly 20 minutes from start to finish. After toasting one side, cut a small hole for the egg — a cookie cutter gives a clean edge and is easier to work with than a cup when dealing with a thicker sandwich. Mash the avocado so it adheres to the bread and doesn’t slide out. Optional: add bacon for extra savory flavor.
