This mint brownie pie is incredibly easy to make. It begins with a box of dry brownie mix (or your favorite homemade batter), is studded with chocolate mint chips and baked in a pie shell for a simple yet impressive dessert.
The week has been dark and dreary — the kind of weather I enjoy watching while my cat curls up in my lap. Lately the rain has been humid and heavy, the kind that makes everything feel sticky and slows you down. My mood has followed suit with a few emotional ups and downs, so I haven’t been my usual cheerful self.
But enough of that — on to cooking!
Every week a couple of friends and I get together for lunch. This week we decided to keep things easy and meet at someone’s house. “Keep it simple” turned into an opportunity to play in the kitchen.
For our meal I made a creamy slow-cooker tomato soup with basil and this delightful mint brownie pie to go with my friends’ grilled gourmet cheese sandwiches.

Mint Brownie Pie
Ingredients
- 1 4.6- ounce package chocolate mints, chopped
- 1 15.8- ounce package brownie mix or use your favorite homemade brownie recipe
- 1 unbaked – 9-inch deep-dish frozen pastry shell
Instructions

Line a 9-inch pie dish with the unbaked pie crust.

Prepare the brownie batter according to the package directions (or your recipe). Pour the batter into the pie shell and evenly sprinkle the chopped chocolate mints over the top.

Bake at 350°F (175°C) for about 45 minutes. Remove when the center is still slightly gooey — the pie will set as it cools. Serve warm, preferably with a glass of milk.
