I keep wishing the holidays could rewind so we could enjoy them a little longer. It felt great to spend more time with family and friends, and now it’s back to full work weeks. Description

Every birthday celebration needs ice cream. This Vegan Cashew Ice Cream is dairy free and made with just three simple ingredients: roasted cashews, unsweetened vanilla almond milk, and 100% pure maple syrup.


Ingredients

  • 2 cups roasted unsalted cashews, soaked overnight
  • 2 cups unsweetened vanilla almond milk
  • 1/2 cup 100% pure maple syrup

Instructions

  1. Cover the cashews with water and soak overnight.
  2. Drain the cashews and add them to a high-powered blender.
  3. Blend the cashews with 1 cup of almond milk on low to medium speed for a few minutes, gradually increasing to high until the mixture is smooth and frothy.
  4. Add the remaining almond milk and the maple syrup, then blend until fully combined.
  5. Pour the mixture into an ice cream maker and churn until it reaches a soft-serve consistency.
  6. Transfer the ice cream to a container and freeze until firm, about 1–2 hours.
  7. Before serving, let the ice cream soften at room temperature for 5–10 minutes for easier scooping.
