This quick and flavorful Chipotle Kale Salad features tender massaged kale tossed with fresh vegetables and a homemade honey chipotle dressing.

Start with a base of chopped, massaged kale to eliminate bitterness and create a silky, tender green. Pile on fresh vegetables—cherry tomatoes, sweet corn, creamy avocado, diced bell pepper and sliced jalapeño all work beautifully. Use whatever’s in your fridge and make it your own.
The dressing is a simple copycat of Chipotle’s honey chipotle vinaigrette: smoky, tangy and just sweet enough. It comes together quickly in a blender or with an immersion blender and coats the salad without overpowering the ingredients.
For protein, choose your path: keep it vegetarian with black beans, lentils, or roasted chickpeas, or add shredded rotisserie chicken, leftover taco meat, carne asada, grilled steak, or quick sautéed shrimp. The honey chipotle dressing complements any option.


But… how do you massage kale?
It’s fast and easy. Chop the kale into small, bite-sized pieces so each forkful gets a good mix of greens and toppings. Place the kale in a large bowl, drizzle with a teaspoon or two of avocado or olive oil, add a pinch of salt and a squeeze of lemon if you like, then rub the leaves with your fingers until they darken and soften. Chipotle Kale Salad
This salad is delicious and flexible. The recipe below makes roughly four side salads or two generous main-course portions. It stores well: the mixed salad (without dressing) keeps in the refrigerator for up to four days, and the dressing will keep in a sealed jar for 1–4 days. Make ahead for easy lunches and faster weeknight meals.
Honey Chipotle Dressing
The quantities below make about 1/2 cup of dressing. Halve the ingredients if you need less.
- 1/3 cup avocado oil (or other neutral oil)
- 3 TBSP red wine vinegar
- 1.5 TBSP honey
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp dried oregano
- 1/4 tsp ground cumin
- 1 chipotle pepper in adobo sauce
- 1 small/medium clove garlic, smashed and peeled
- Combine all ingredients in a blender, food processor, or use an immersion blender. Blend until smooth and emulsified.
- Taste and adjust: add more adobo for smokiness, more honey for sweetness, or more vinegar for brightness. If it’s too spicy, thin with a little extra oil, vinegar, or water.
- Optional: stir in juice of 1/2 a lime for a fresh citrus lift.

- 1 bell pepper, any color, diced
- 1–2 cups sweet corn (fresh, frozen and cooked, or canned)

- 3 TBSP fresh chopped cilantro (optional)
Honey Chipotle Dressing
- 1/3 cup avocado oil
- 3 TBSP red wine vinegar
- 1.5 TBSP honey
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp dried oregano
- 1/4 tsp ground cumin
- 1 chipotle pepper in adobo
- 1 small clove garlic, peeled and smashed
- Juice of 1/2 lime (optional)

Instructions
Honey Chipotle Dressing
- Blend all dressing ingredients until smooth and emulsified. Taste and adjust seasoning, sweetness, or smokiness as desired. Stir in lime juice if using.
For the Salad
- Chop your vegetables. Massage the kale with a drizzle of oil and a pinch of salt until tender.
- Combine kale and vegetables in a large bowl. Drizzle with dressing—about one third to start—and reserve the rest for serving so everyone can add more if they like.
