Naan bread pizza with roasted cauliflower

Ingredients

  • 1 teaspoon mild or hot curry powder
  • ¼ teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • 1 ½ teaspoon salt
  • 2 tablespoon olive oil (plus extra for drizzling)
  • ½ medium cauliflower (cut into florets)
  • 4 small naan breads (can use pitta breads too)
  • 4 tablespoon tomato puree (or passata)
  • 8 mozzarella slices or vegan mozzarella slices (optional)
  • 1 small red onion (thinly sliced)
  • 1 small red chilli (thinly sliced)
  • 1 small green chilli (thinly sliced)

Instructions

  • Preheat the oven to 200°C and line a baking tray with parchment paper.
  • In a medium bowl combine the curry powder, cumin, turmeric, salt and olive oil. Add the cauliflower florets and toss until well coated. Arrange the cauliflower on the lined tray and roast for about 20 minutes, or until golden and slightly crisp.
  • Place the naan breads on a baking tray and spread each with tomato puree or passata. Top with mozzarella slices if using, then add the roasted cauliflower, sliced red onion and chillies. Drizzle with a little olive oil and bake for about 15 minutes, until the cheese melts and the edges of the naan are crisp. Serve warm with a yoghurt dip or your favourite sauce.
