Homemade Vegan Snickers Bars Recipe – Chewy Chocolate Candy

You won’t believe these Vegan Snickers Bars are made with healthy, whole foods ingredients – they’re the perfect decadent treat!

My birthday just passed and, for some reason, turning 24 feels strange. I don’t feel old, but I do feel like I should have more figured out. Life right now is a little uncertain: I’m looking for a job and weighing some personal things I’m not ready to share. Everywhere I look, friends from high school and college are getting engaged and married. It’s surprising — some days I still feel like a teenager begging my parents for permission to drive.

If I feel this way at 24, I can’t imagine how I’ll feel at 30 or 40. Time seemed endless when I was younger; now it seems to fly by. Does anyone else notice how quickly the years pass?

Regardless, the best we can do is enjoy the moments we have — and that definitely includes eating these vegan snickers bars. When I made them for friends, they couldn’t believe they were made from wholesome, simple ingredients. They’re completely natural: buckwheat, coconut oil, organic peanut butter, peanuts, cacao and dates. In my opinion they taste even better than a traditional Snickers and don’t contain any unnecessary additives. I hope you enjoy them as much as we did.

Raw Snickers Slice

You won’t believe this raw snickers slice is made with wholesome ingredients — it’s rich, decadent and surprisingly simple.

Ingredients

Biscuit Layer

  • 1 1/2 Cups Raw Buckwheat Groats
  • 4 Dates, pitted
  • 1/4 Cup Raw Agave Nectar

Peanut Butter Layer

  • 1/2 Cup Shelled Peanuts
  • 1/2 Cup Peanut Butter
  • 1/4 Cup Raw Coconut Oil, melted

Chocolate Layer

  • 1/4 Cup Raw Coconut Oil, melted
  • 1/4 Cup Raw Agave Nectar
  • 1/4 Cup Raw Cacao Powder

Instructions

Biscuit Layer

  1. In a food processor, pulse the buckwheat groats until a chunky meal forms. A few whole groats are fine.
  2. Add the dates and agave, then process until a sticky dough comes together.
  3. Press the biscuit mixture into a parchment-lined pan (a loaf pan works well). Set aside.

Peanut Butter Layer

  1. Scatter 1/2 cup of shelled peanuts evenly over the biscuit layer.
  2. In a bowl, mix the peanut butter with the melted coconut oil until smooth and creamy.
  3. Pour the peanut butter mixture over the peanuts, then freeze the pan for about 30 minutes to set.

Chocolate Layer

  1. Combine the melted coconut oil, agave nectar and cacao powder until smooth, then pour over the peanut butter layer.

Putting It All Together

  1. Refrigerate the slice for about 30 minutes to firm up. When set, cut into bars and serve.
  2. Enjoy!
