Crispy Lemon Garlic Asparagus Roast: Simple Weeknight Side

When Gabe planted a large patch of asparagus two years ago, we didn’t realize how wonderful it would be to harvest fresh spears every few days. Having a steady supply inspired us to try simple preparations and a few dressed-up versions too.

I didn’t grow up eating asparagus — in fact, one of the first things my dad did when we moved to an older homestead was clear the asparagus patch. Now I’m glad to be on the other side of that decision. Asparagus is one of those vegetables people learn to love over time; my son refused it for years, and now it’s one of his favorites. If you’re trying to get kids to eat more veg, patience and good preparation can help.

I usually keep asparagus preparations simple — roasted asparagus with olive oil, salt, and pepper is a reliable favorite — but this lemon garlic version adds bright citrus and aromatic garlic for an easy weeknight side that feels a little special without extra work.

Lemon Garlic Asparagus Recipe

A few helpful notes before you start:

  • Fresh asparagus is ideal, but frozen works well when handled properly. Spread frozen spears on a baking sheet without seasoning and let them thaw in the preheating oven so excess water evaporates. Shake the pan once or twice. When the asparagus feels dry, remove it, season, and roast.
  • Lemon slices infuse the asparagus with citrus aroma; you don’t need to cover every spear. Arrange slices across the top so their juices mingle with the garlic and oil.
  • Fresh minced garlic gives the best flavor, but jarred minced garlic is an acceptable shortcut when you’re short on time.
  • Parchment paper makes cleanup easy and helps prevent sticking, though a lightly greased sheet works too.
  • To trim asparagus, hold a spear in both hands and bend it until it snaps naturally; it will break where the tender part begins. Repeat for all spears.

Lemon Garlic Asparagus Recipe

Roasted asparagus with garlic, lemon, salt, and pepper — a quick, flavorful side dish.

Ingredients

  • 1 lb asparagus
  • 2 cloves garlic, minced
  • 1 Tablespoon olive oil
  • 1 lemon, thinly sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 425ºF (220ºC).
  2. Trim the woody ends of the asparagus by bending each spear until it snaps where it becomes tender.
  3. Arrange the spears on a parchment-lined or lightly greased baking sheet in a single layer.
  4. Drizzle with olive oil and toss to coat evenly.
  5. Sprinkle the minced garlic over the asparagus, then season with salt and pepper.
  6. Slice the lemon about 1/8 inch thick and scatter the slices over the asparagus.
  7. Roast in the center of the preheated oven for about 20 minutes, or until the asparagus is browned and tender to your liking; thicker spears will take a bit longer.
  8. Remove from the oven, squeeze any extra lemon juice from the slices over the asparagus, and toss gently to coat.
  9. Serve hot and enjoy!
