Cookie Butter Sandwich Cookies — Crunchy Fillings & Simple Recipe

Craving something sweet? Try these delectable Cookie Butter Sandwich Cookies! Soft, buttery, chewy goodness with a creamy cookie butter filling—perfect for any occasion!

cookie butter sandwich cookies

Cookie Butter Sandwich Cookies bring together the warm, spiced flavor of cookie butter with tender, chewy cookies for a truly irresistible treat. Each sandwich has a creamy cookie butter filling hugged between two soft, buttery cookies that are lightly crisp on the edges and chewy inside. The dough is simple to make with everyday ingredients, but the resulting cookies taste far more special than their modest recipe suggests.

These cookies strike a pleasant balance of textures and sweetness. The exterior develops a slight crisp while the interior stays soft, and the filling adds the perfect amount of sweetness and spice without overwhelming the cookie. If you prefer, you can skip the filling and enjoy the plain cookies on their own—the flavor is delicious either way.

They’re versatile enough for holidays, parties, bake sales, or an everyday snack. Serve them with a glass of milk, alongside coffee, or pack them for a picnic. Once you bake a batch, they’ll disappear fast—so make extra if you want leftovers.

Storage:

These sandwich cookies store well and can be kept using several methods depending on how long you want them to stay fresh:

  • Room temperature: Place cookies in an airtight container and keep at room temperature for several days. This is ideal if you plan to eat them soon after baking.
  • Refrigerator: Store in an airtight container in the fridge to extend freshness, especially in warm climates where fillings can soften quickly.
  • Freezer: Sandwich cookies freeze well. Arrange them in a single layer on a baking sheet to freeze briefly, then transfer to a freezer-safe container or bag. They’re delicious eaten straight from the freezer or thawed at room temperature.

No matter which method you choose, keep cookies covered to retain their soft, chewy texture and the flavor of the cookie butter filling.
