Cauliflower Crunch Salad with Honey Jalapeño Dressing

Fresh cauliflower, crisp red pepper and onion, sweet dried apricots, and crispy bacon are brought together with a honey-jalapeño garlic vinaigrette for a bright, crunchy salad that’s easy to prepare and crowd-pleasing.

Ingredients

  • 1 head of cauliflower (about 4–5 cups chopped)
  • 1 large red bell pepper
  • 1/2 large red onion
  • 1½ cups dried apricots
  • 6 strips thick-cut bacon
  • 1 jalapeño
  • 2 tablespoons honey
  • 12 ounces garlic vinaigrette
  • 2 tablespoons mayonnaise
  • 1/2 tablespoon dried parsley

Instructions

  1. Wash and dry the cauliflower, then chop into bite-sized florets.
  2. Wash, dry, and finely dice the red bell pepper.
  3. Finely dice the red onion.
  4. Toss the cauliflower, bell pepper, and onion together in a large bowl.
  5. Carefully seed the jalapeño (if desired) and finely dice.
  6. Combine the garlic vinaigrette with the diced jalapeño, mayonnaise, and honey. Whisk until smooth. Refrigerate for a few hours or overnight for best flavor.
  7. Dice the bacon and cook in a hot pan until crispy. Drain on paper towels.
  8. Finely dice the dried apricots and stir half into the vegetable mixture.
  9. Add about half of the dressing to the vegetables and toss to coat. Let sit up to an hour to allow flavors to meld, or serve immediately for extra crunch.
  10. Just before serving, toss again, sprinkle with dried parsley, and top with the remaining apricots and crispy bacon. Serve extra dressing on the side.

*The dressing will be more flavorful if it sits overnight. The salad holds up in the fridge, though the vegetables will soften slightly.
