Unleavened bread is a simple flatbread made without any rising agents. Known as matzah in the Jewish tradition, it carries deep symbolic meaning. This easy three-ingredient recipe provides a straightforward, biblical-style option for Passover or any time you want a plain, unleavened bread.

Unleavened Bread Recipe
Flatbreads are versatile and can be enjoyed year-round. If you want to follow traditional halakha for Passover, choose kosher wheat flour—ideally one that has not contacted water during processing. That said, this recipe works with standard flour you likely already have on hand.
For those who observe Christian symbolism, Passover points to Christ: “For Christ, our Passover lamb, has been sacrificed” (1 Corinthians 5:7). Preparing unleavened bread can be a meaningful way to reflect on biblical themes and the redemption of God’s people.
This version omits olive oil to remain closer to an authentic unleavened bread. If you prefer a softer texture, up to 4 tablespoons of olive oil may be added when mixing the dough (note this may not meet strict Jewish regulations). You can also roll out the whole batch, score it, and cook larger pieces, baking or skillet-cooking for a few minutes per side. Serve warm with a simple salad, grilled chicken kebabs, or a dip for a satisfying meal—think of it as similar to naan without leavening.
