- ½ cup almond flour, or whole-wheat/all-purpose
- ¾ tsp ground cinnamon, optional
- 1 tsp baking powder
- ⅓ tsp baking soda
- a pinch of salt

Preheat oven to 180°C (350°F) and line a 20 cm (7.9 in) loaf pan with parchment or grease it.

Grate the zucchini and squeeze out all extra water. Set aside.
